Wow, that is one ambitious list, and you have been so busy already...
How hard is it for you to find foreign language films? There are tons of fascinating actors and directors, but if you can't get your hands on the films it's no use recommending them.

Ok then: Ingrid Bergman, Marcello Mastroianni (esp. 'Una giornata particolare'), Simone Signoret, Catherine Deneuve, Kristin Scott Thomas, Daniel Auteuil, and directors Ingmar Bergman, Federico Fellini and Jacques Tati. I can't say I like everything these people have made, but some films are fascinating.
